HS kitchen prepares food for the high school and middle school. Menu was tacos, corn, shredded lettuce, cheese. Food is transported to the middle school in hot boxes. Interviews with staff and temperature checks showed all food was prepared, served and stored at acceptable temperatures. Cook expertly explained the cooling process in case of leftovers. One of the 2 hand wash sinks was partially blocked, staff made the second sink available.

Notes are for Peru High-school, Intermediate school and elementary school. Facility is still operating on Covid schedule. Students rotate Mon Tues, Weds Thurs. High-school students do eat lunch in the cafeteria, however food is brought to them and the buffet style dining has been suspended. Elementary and intermediate students have food brought to their classrooms where they eat. Today’s menu was Popcorn chicken, milk, orange slices and craisins. Facility is not currently handling or preparing any raw meat products. |There were no violations at any of the 4 kitchens. Operator did ask for second yearly inspection if possible.

Highschool students eat in the cafeteria, all other levels have food brought to the individual rooms by staff in insulated boxes. HS lunch was a chicken wrap with lettuce and tomato. Other levels had popcorn chicken and fruit. Temperature logs are being kept for refrigerated units. Students have the option to take home lunches for the days they are not in class. Students who are completely remote can pick up lunches at meeting locations.

This is the second 2018 routine inspection. All violations from last inspection have been corrected. Rapid chiller is in use. It was recommended to use cooling logs to create a time-temperature record of cooling foods. These records should be reviewed by the food service director to ensure foods go from 120°F to below 45°F within time requirements. Temperature Guidelines posting was given.

Discussed Holding time of sandwiches dated 11/13 that were observed in stainless steel pans on an ice bath on serving line with food worker. Sandwiches without mayonaise are served for three days and any leftover after that, are discarded. The food worker only puts out enough sandwiches for each group of students going through the serving line. Temperature moitoring was encouraged, as well as encasing the whole pan in ice, not just layering the bottom of pan.

Comment: Menu served on day of inspection included chicken paddies with lettuce and tomato, carrots, pineapple and milk. Items checked during inspection included the following: accuracy of food probe thermometer, proper hot (chicken paddies) and cold (milk) holding, proper concentration of sanitizer for wiping cloths, proper sanitizing of dishes by dishwasher and general sanitation in food prep and fopd storage areas. All food workers doned gloves when appropriate and appeared healthy.

Facility does flash freeze left food items, date and hold froze until the menu item is served again or it is used in preparation of another menu item.|Discussed prepartion of turkey roast with kitchen manager. The frozen item is thawed in walk-in cooler. It is than cooked, cooled and held in cooler until day of service. On that day, the turkey is sliced, reheated, hot held and served. The gravy that is served over the turkey is processed product. The drippings are not used to make gravy.

Dataset Details

The New York State Department of Health's Bureau of Community Environmental Health and Food Protection works to protect the public health by assuring that food service establishments are operated in a manner that eliminates hazards through design and management, resulting in a decreased incidence of foodborne illness in our communities. The Bureau's Food Protection Program also coordinates foodborne outbreak investigations, analyzes the findings and uses this information to develop regulations and guidance designed to prevent similar outbreaks in the future. This data includes the name and location of food service establishments and the violations that were found at the time of their inspections. Violation details are collected on inspection reports (i.e., the actual food item, quantity and temperature of food found out of temperature control) as well as corrective actions for critical violations; this data set is limited to the violation number and the corresponding general violation description.

There are over 90,000 food service establishments in New York State. The Food Protection Program provides guidance and assistance to county and city health departments and State District Offices which in turn permit and inspect food service establishments, some institutional food services, temporary and mobile food service establishments and food and beverage vending machines. Each food service establishment is registered with facility name, business address, inspection dates, violations, etc.

To give New Yorkers the access they deserve to government data and information, Governor Andrew M. Cuomo launched the Open NY initiative in March 2013 and signed Executive Order 95. It directs state agencies to identify, catalog, and publish their data on the state's open data website administered by the Office of Information Technology Services (ITS). Open NY increases transparency, improves government performance, empowers New Yorkers to participate in government, and encourages research and economic opportunities statewide.
