Comments: Most of the violations cited during the previous inspection have been corrected. Outstanding items include: 1. Missing panel on the section of the center island where the steam table mechanicals are housed, which is allowing for a grease and food debris to get into this area. 2. The top interior of the ice machine has sections of mold/mildew growing, directly above the ice (food). 3. Almost all cutting boards in the establishment are no longer smooth and easily cleanable due to deep knife cuts and heavy previous use. 4. Pooling water was observed in the bottom of the center and right-hand drawer refrigeration units in the center island. The ice machine has had visible mold/mildew growth on the ceiling of the unit's ice bin during multiple previous inspections. The sanitary conditions of this unit, specifically mold/mildew growth on the ceiling on the ice bin, needs to be monitored and kept cleaned. Ice is considered food and needs to be protected from contamination of mold/mildew.
