At the time of the inspection kitchen staff were preparing for a small event, foods included non TCS hors d oeuvres. The event was an hour long and all foods would be discarded after. Kitchen staff were observed wearing gloves while handling ready to eat foods. Food was transported in a refrigerated van from the college and put together at the facility. |Violations cited are facility related violations. Kitchen manager will share the results of this inspection with the operator of the facility.

This report is for the boathouse. Food is mostly prepared offsite at an approved kitchen. Food is transported in temperature controlled boxes. Temperatures are measured when leaving the kitchen and arriving at the boathouse, logs are kept. The boathouse kitchen is used for final garnishing. No food was being stored or prepared during the inspection. Repairs on a hole in the wall were underway and will be completed before the kitchen is used again.

The catering operation at Samuel D�s was inspected. Staff member was preparing for an event that taking place the following day. Proper food handling and preparation was observed. All cold held food items were less than 45F. Chicken breast and Prime rib will be cooked onsite at the boat house. The kitchen used for the catering operation is extremely clean and well maintained.

1) The facility has intermittent use, it is stongly recommended proper operation of all refrigeration units be confirmed a day before their intended use by observing an accurate ambient thermometer. 2) Travel distance time is considered to be 20-30 minutes, transport refrigeration may or may not be neccessary. The best way to determine the need for transport can be determined with repeat use of transport logs indicating temperatures at loading and at placement under proper refrigeration at serving kitchen. Appication of items 1) and 2) would have help avoid one critical and two minor violations.

Dataset Details

The New York State Department of Health's Bureau of Community Environmental Health and Food Protection works to protect the public health by assuring that food service establishments are operated in a manner that eliminates hazards through design and management, resulting in a decreased incidence of foodborne illness in our communities. The Bureau's Food Protection Program also coordinates foodborne outbreak investigations, analyzes the findings and uses this information to develop regulations and guidance designed to prevent similar outbreaks in the future. This data includes the name and location of food service establishments and the violations that were found at the time of their inspections. Violation details are collected on inspection reports (i.e., the actual food item, quantity and temperature of food found out of temperature control) as well as corrective actions for critical violations; this data set is limited to the violation number and the corresponding general violation description.

There are over 90,000 food service establishments in New York State. The Food Protection Program provides guidance and assistance to county and city health departments and State District Offices which in turn permit and inspect food service establishments, some institutional food services, temporary and mobile food service establishments and food and beverage vending machines. Each food service establishment is registered with facility name, business address, inspection dates, violations, etc.

To give New Yorkers the access they deserve to government data and information, Governor Andrew M. Cuomo launched the Open NY initiative in March 2013 and signed Executive Order 95. It directs state agencies to identify, catalog, and publish their data on the state's open data website administered by the Office of Information Technology Services (ITS). Open NY increases transparency, improves government performance, empowers New Yorkers to participate in government, and encourages research and economic opportunities statewide.
