Vegetarian and ground beef chili was being prepared fresh for service. The temperature of all of the chili was >170 F. The chili will be removed in small batches from the stock pots on the stove and placed in crock pots to be hot held for serving. The chili will likely all be consumed during the event, but any leftover chili will be frozen. Proper cooling technique was discussed. All refrigerators and freezers had thermometers and food was within acceptable temperature range. The importance of test strips to monitor and prepare proper concentration of sanitizer was discussed. Inspector was told test strips would be ordered that day. Sanitizer concentration was within acceptable range for use. Overall the food workers appeared knowledgeable about food safety. Gloves and hair nets or hats were worn, and a properly calibrated food probe thermometer was out and available for use.

Comment: The Church food service event involved serving an Egg Casserol (Strata), Baked stuffed French Toast, bacon, coffee and juice. Though the event was open to the general public, most food consumers were Church attendees and serving time would go until all the food was consumed which, would likely be less than two hours. This was the first year for the event kitchen manager. Inspector explained Sanitary Code requirements to ensure safe food. Inspector will also, send the Food Safety Packet and all food workers must read it or be trained on proper food safty practices. Proof of an available accurate food probe thermometer must be sent to the Health Department by May 6, 2022 and it's proper use be instituted in all future food service events.

Comment: Menu included scrambled eggs, hash browns, sausage links, biscuits and gravey, french toast, juice, milk and coffee|Food service event went from 9:00 to 12:30. Two waves of busy serving occurred following the 8:00 and 10:00 church services. All fresh breakfast food items were prepared just prior to the ending of each service. There was no hot holding after the first group had finished eating. The food service event ended after the second group finished eating at around 12:30. This reduced the hot hold time to maybe 45 minutes. The food handlers seemed very experienced in reducing the risk from cook, hot hold and serve to just cook and serve. Well run operation.

Dataset Details

The New York State Department of Health's Bureau of Community Environmental Health and Food Protection works to protect the public health by assuring that food service establishments are operated in a manner that eliminates hazards through design and management, resulting in a decreased incidence of foodborne illness in our communities. The Bureau's Food Protection Program also coordinates foodborne outbreak investigations, analyzes the findings and uses this information to develop regulations and guidance designed to prevent similar outbreaks in the future. This data includes the name and location of food service establishments and the violations that were found at the time of their inspections. Violation details are collected on inspection reports (i.e., the actual food item, quantity and temperature of food found out of temperature control) as well as corrective actions for critical violations; this data set is limited to the violation number and the corresponding general violation description.

There are over 90,000 food service establishments in New York State. The Food Protection Program provides guidance and assistance to county and city health departments and State District Offices which in turn permit and inspect food service establishments, some institutional food services, temporary and mobile food service establishments and food and beverage vending machines. Each food service establishment is registered with facility name, business address, inspection dates, violations, etc.

To give New Yorkers the access they deserve to government data and information, Governor Andrew M. Cuomo launched the Open NY initiative in March 2013 and signed Executive Order 95. It directs state agencies to identify, catalog, and publish their data on the state's open data website administered by the Office of Information Technology Services (ITS). Open NY increases transparency, improves government performance, empowers New Yorkers to participate in government, and encourages research and economic opportunities statewide.
