Spoke with cook and manager regarding repetitive temperature violations and importance of proper holding temperatures. Cook spoke of the difficulty he was having with maintaining proper cold holding temperatures due to the temperature in the kitchen and the configuration of the kitchen - prep coolers are very close to stove, ambient temperatures in kitchen are very warm. I suggested facility use control charts to monitor cold holding temperatures and identify potential cold holding problems.
